As in everything in my life I get obsessed of things for a period of time and then rotate to other options.

Valentines day: love yourself
To all my singles or coupled people out there just wanted to wish a lovely valentines day. May it be filled with love & joy! And to all also always keep in mind to love yourself and take care of you! That is very important because if we do not love ourselves how can we expect someone else to love us?
It is a very important question.
One thing that has helped me a lot to love myself has been meditation, exercise, and letting go of things that no longer serve a purpose.
Currently in my headspace app I am at the stage where I can pick the packages I want to focus on. I am currently on level 2 of the self esteem one. I can attest that it has been very helpful. I do not know if you can relate but sometimes I have an inner voice that wakes up some doubt in me. This package has helped me to let go of the voice, not quiet it nor leave it behind, but rather to identify it as just a thought or a feeling and move on. Not trying to understand why is there or what does it mean rather just identify it as either a feeling or a thought and continue on! Which has been key! So to all of you out there I highly recommend taking the time and starting on meditation.
Another aspect to improve your self esteem is the acceptance of who you are. Respect of who you are. And valorization of who you are. With that in mind you will always value yourself and let go of things that do not appreciate you or respect you! Therefore letting go of anything that does not bring you peace or leaves you drained or doubtful of your worth or who you are!
Working out has also helped me a lot! Just the release of any tension or conflict you may be going through can be let go by a good work out! I love doing yoga, pilates, & weight lifting. I miss my cardio ( I used to run a lot but always ended up with back & knee pain so it no longer served a purpose) instead I am trying to walk more to get that cardio take but with those 3 I swear if I am grumpy in the morning, which I tend to be, post work out I have a clear mind and I’m more at peace plus less grumpy! Follow it with 10 minutes of meditation and a wonderful shower and you are off to a good start!
So on this day not only love others but most importantly love YOU, as that love will flourish to others!

Sundaze Homemade Pizzaaa 🍕
Happy Sunday to you all!! For today’s post I am sharing my pizza recipe
What you’ll need
Dough
2 tsp yeast
1 tsp sugar
4 cups AP flour
2 T sugar
1 T salt
1 1/2 cups of warm water
3 T olive oil
First prepare your yeast by adding the 2 tsp and 1 tsp sugar with a little bit of water, set it aside and let it rise. In a mixer place your dry ingredients, mix them. Then to your yeast mixture add the water and olive oil. Put the dough paddle and in slow speed start adding the water mixture. Once added completely mix at medium speed for 5 minutes. Remove it from bowl and on a floured surface kneat for 2 or 3 minutes. Make a ball and cover a bowl with olive oil and set it inside. Let it rise for at least 3 hours cut it in half and let it rise for about 20 minutes or until double the size. You can save your dough or use it all. I usually use just one half.
Filling
3 tomatoes finely chopped in squares
1 T olive oil
1 tsp balsamic vinegar
Salt and pepper to taste
100 grs. of mozzarella
And any toppings you may like
Place the tomatoes on a bowl and add the olive oil, salt & balsamic vinegar. I use that as my tomatoe base. Place all the toppings you wany
Turn on your oven to 420 F or 225 C. Place a rock plate (you can get those at Bed Bath & Beyond and they make the bottom of your pizza crispy)
On a floured surface place your dough and flatten it out and trying to keep it as circular as possible, add your tomatoe, then shredded cheese, and place any toppings you want. Bake for 10 minutes or until golden brown.

Keeping Up With My Goals
Hi guys! Hope you are all having a great Tuesday! Today’s post is on how I am trying to maintain my goals.
In this year of making things happen and keeping a positive healthy mind, one thing that has reminded me of what I wish to attain has been my uncle’s bracelet.
I gave it to him about 15 years ago or even more! Anyway we lost him 13 years ago this year, it was a very sad and probably one of the worst if not the worst days of my life. Will tell his story in time but given that I have lost him and he could not grow older and accomplish his goals. I keep this bracelet on everyday to remind me of what he was not able to accomplish but that I can.
A couple of years I almost lost it and got so scared that I did not wear it for over 3 years, needless to say those were the toughest years I have experienced. I think he even protects me! So for now on he is here with me helping me through this journey and reminding me of what I have an opportunity to do that he does not.
To any of you out there who want to “Make this year your year” and accomplish things you have set, I would advice you to wear something dear to you to have as a reminder of what you wish to do!

Learning To Let Go
Today’s post is an important one. I was hesitant on sharing it but given that today is my birthday and that this year I wanted to make some changes, I decided to go for it and share it sooner than I anticipated.
When I decided to start this journey, I wanted to make it as open and real as possible. With this openness I also wanted to share some “lessons” that I have learned so far.
A key one has been learning to let go. Though it is very hard, it is important. What I mean by learning to let go is to know when to stop certain situations and just let them be.
An important experience I have had in the past years has been on friendships. As you go from being a “kid” to kinda being an adult, there are certain people you lose along the way.
Though it is very hard to accept this, some people were part of your life at one moment for who knows the reason. When that “treasured” friendship changes and is no longer healthy, you have to learn to let it go. Be thankful for the time you have spent and just accept that there is no longer a space for them in your life.
This goes for friendships that, I do not know if you have experienced this, but it is when you meet up with someone that you valued a lot in your life but suddenly you do not have anything in common, and not only that, but the person does not have the best interest of you at heart. Or every time you meet up with them you are left with the feelings of dread, anguish, tiredness, and dissapointment.
What I have learned is that there is no friendship that has more value than your own sanity. For your health and peace of mind is better to look back appreciate the moments you had with this person or people and just let them go. At the end you will be happier. It does not mean that you wont be able to see them ever again, it just means that the close bond you shared is no longer there. Though you may occasionally see them, just know that things have changed and is best to walk your own way.
Just wanted to share this thoughts and hope it gives an insight and help through this moment to anyone out there!

Happy humpday everybody!! Today I wanted to share my favorite recipe for the “One thousand layer cake” *side note it won’t be 1k layers but it does feel like you are making one like that, totally worth it though 👌
The recipe is from Miriam Baptista’s cooking book. You will need to prepare the dough 2 days ahead *repeat it is tootallyyy worth it*
What you will need:
1 or 227 gr of butter
1 1/2 cups of sugar
3 eggs or egg replacement
1/2 cup of milk
2 tsp vanilla extract
5 cup AP flour
1/2 tsp salt
3 tsp baking powder
1 1/2 or 2 cups of dulce de leche
2 cups of cream
2 T shredded coconut
Preparation
2 days ahead
Sift your dry ingredients set aside. On a mixer soften the butter and slowly add the sugar. Once mixed together slowly add the eggs or egg replacement and vanilla extract. Once mixed in start adding the flour and milk. Place on wrap paper fully covered and leave on the fridge for one day.
1 day ahead
Use a round plate (regular serving plate) or a cake mold and make rounds. Cut them and set them aside. Divide your dough on 14 peaces and flatten the dough on the parchment paper as pictures. Bake at 350 F or 175 C for about 5 minutes or until golden on the sides. Be careful because they bake fast. As they come out of the oven place them on top of each other. Once all baked set them aside and leave them resting over night.
Serving day
On the serving day you will fill the cake. Purchase dulce de leche or make your own*just place canned condense milk, I would do 3 or 4 cans just incase, in a big pot and set to boil for approximately 4 hours* Prepare your cream and set aside. You can layer the cake 1 dulce de leche 1 cream, I personally prefer doing 2 dulce de leche and 1 cream. Just make sure the top of your cake is dulce de leche. Once finishing layering on the top part sprinkle the shreded coconut and that is it! Enjoy!
